One Bowl and Pan Chocolate Cake

I’m sharing with you my absolute favourite chocolate cake recipe. It’s super easy and can even be made in one pan.. which is perfect for low-mess in a tiny house kitchen.

This super moist cake has been a favourite of mine since I was a kid, it’s great to make for vegan friends and family as it contains no milk, no eggs or butter! Making it an ideal option for anyone with a dairy or egg allergy, one our family is very familiar with. I’m sure it could be easily made as a gluten-free cake if you exchange the flour for a gluten-free option.

I like to use my spring-form pans, though many will use a square baking dish. You can easily double if you’re making a layered cake. The big advantage of this cake is that it can be mixed in the pan you’re baking in. A huge Bonus!


WACKY CAKE HISTORY

This cake has a bit of history to it, the recipe came about during the Great Depression when butter, milk, eggs were rationed and in limited supply. If you do a search on Pinterest or any recipe site, you may also come across various monikers such as Wacky Cake, Crazy Chocolate Cake or even Wowie Cake, whichever name you choose to call, you’ll enjoy a really delicious moist cake! 

Wacky Chocolate Cake

1 cup sugar

1 1/2  cups flour

1/2 teaspoon salt

1/4 cup cocoa

1 teaspoon baking soda

1 tbsp vinegar pour into one well

1/3 cup vegetable oil + 1  teaspoon pure vanilla

1 cup cold water or coffee

  • Take your Dry ingredients, sift together and mix  in a square pan. Making three wells in your dry mix, you’ll pour the wet ingredients separately : vinegar pour into one well , vegetable oil +vanilla into the second well. And last the cold water or coffee into the third well.

  • Stir together in the pan, till it’s well blended. and smooth.

  • Bake 35 minutes in 350 degree oven.

To Decorate, allow to cool, using a small sifter add icing sugar sprinkled over the top.
You can also use a paper lace doily to create a really pretty icing pattern and serve with vanilla bean ice cream, once the cake has cooled.

Use this recipe as a base, add in chocolate chips for a fun twist or add in a bit of orange extraction and decorate with sugared orange slices!
